Sourced from La Huaca in Huabal, this is a clean, well-structured cup that balances comfort with clarity, the kind of coffee you end up reaching for every day.

About the farmer:
Clever Delgado is the producer behind La Huaca, a 4-hectare farm tucked away in the village of El Huaco. Over recent years, he’s focused heavily on improving quality, refining plant spacing, production techniques, and overall farm management with the support of his family.
At La Huaca, quality starts at harvest. Only fully ripe cherries are selected, with strict picking standards enforced throughout. The cherries then undergo an extended 72-hour fermentation, longer than typical, before being thoroughly washed and dried over approximately 15 days.
This extra attention to detail shows in the cup. Clever’s approach has led to a noticeable lift in clarity and sweetness, giving the coffee a clean, structured profile with a soft, rounded finish.
We’ve roasted Clever’s coffee to emphasise its biscuity sweetness and gentle juiciness, resulting in a clean, smooth and versatile cup.
Best suited for espresso, where those chocolate Bourbon biscuit notes really come alive, but just as comfortable brewed as filter when you want something easy-drinking and balanced.
